Grown at high altitudes in San Pedro de Cartago, Nariรฑo, this Chiroso variety pushes the boundaries of specialty coffee with its distinctive, syrupy sweetness and malic acidity.

From Farm to Cup: The Story of Los Guayacanes

Crafted by Evelio Lasso, a dedicated farmer from San Pedro de Cartago, Nariรฑo, Colombia Los Guayacanes represents the finest in Chiroso coffee. Evelioโ€™s farm, sitting at 1900 meters above sea level, is known for pioneering innovative processing methods. The Chiroso variety, which traces its roots back to Ethiopian landraces, is unique for its tea-like brightness and fruit-forward profile.

The beans undergo a meticulous vacuum fermentation process, where they are fermented in airtight barrels with degas valves for 40 hours before being washed and dried on covered patios. This advanced technique amplifies the vibrant fruit flavors and distinct yellowish hue of the beans.
